Scones with Honey Butter

Scones:

1 pkg yeast (1 TBSP) dissolved in 1 cup warm water
1 TBSP Sugar
1 tsp. baking powder
1 1/2 tsp. salt
1 1/4 cups milk
1 TBSP. butter

Scald milk. Melt butter in milk. In a mixing bowl combine all ingredients. Add 4 to 4 1/2 cups flour and mix until dough-like. Dough will be sticky. Carefully roll out on floured surface to 1/8 inch thick. Cut into squares and fry in hot oil.

Mmmmm!!! My mother-in-law makes scones. You're making me WANT SOME NOW!!! We're going to spend a couple of days at their home next week...I might be making a request. :-)

We had these last night as Navajo tacos and they were yummy...question: Do you let the dough raise before frying? I noticed the last half of the batch turned out lighter & fluffier than the first half, so I wasn't sure if I was supposed to have let it raise first?

The reason I like this recipe is because you don't need to let it rise, although as you pointed out the last ones come out lighter and fluffier.
